In addition to giving us everything from AIM to the USB flash drive, cell phones to Rummikub (not to mention models for how to value life and support those who support them), the State of Israel has also given us a real-life Willy Wonka who goes by the collective name Max Brenner. The proudly bald and big-idead man who is half of the dynamic duo at the heart of the international chain has been dipping the world in chocolate for over 15 years and recently opened his latest cocoa oasis in Boston. From custom-made serving pieces (including the adorably sensible Hug Mug) to customizable brunches, lunches and dinners that are as delicious as the desserts for which “The Bald Man” is famous, Max Brenner is a perfect spot for a decadent break or a great gooey gathering.

Matt’s Meals: How did you get into cooking?

Max Brenner: At first, I had no interest in cooking. All I wanted to do was write. After serving [in] the Israeli army, I took courses in pastry making that were subsidized by the Israeli government. After I completed the course, I realized that I wanted to fulfill my dream of becoming a writer, so I traveled throughout Europe. In order to make money, I became [an] apprentice for various chocolate makers and pastry chefs around Europe. I fell in love with the happiness chocolate brought people and wanted to bring that back to Israel and around the world.

MM: Where was your first professional kitchen experience?

MB: After returning to Israel, I opened up a small retail shop with my workshop in the back. Customers were more interested in the workshop where I allowed them to lick the chocolate off of the ladles than shopping in the front area. I then realized that people want to experience chocolate with their emotions and fulfill their dreams.

MM: What is your favorite dish to prepare?

MB: Pasta. The smell, the simplicity, the comfort it creates both in cooking as well as eating. And to make it delicious it’s all about the fresh ingredients, which is totally me!

MM: What is the best part of your job?

MB: The endless creativity and inspiration chocolate arouses in me. It’s the fuel of life for me.

MM: What do you usually make for yourself at home?

MB: A seven-grain toast with avocado, fresh tomatoes and chilli flakes. It’s simple, but I’m addicted to it.

MM: If you could dine with any three people, who would they be?

MB: David Bowie, Damian Hirst, and Rob Reiner- all of whom I admire and can enjoy their art forever.
