Such is apparently the thought behind the new private` kitchen at Fuji in the booming food town of (wait for it) Quincy!
Based on the Japanese principle of Omakase (which translates as “leave it up to the chef”), the all off-menu presentations (complete with customized drink pairings) are revealed when a gauzy floral curtain rises in the semi-secluded private dining area. When the curtain goes up, the unique-to-Greater Boston show begins, as diners are invited to watch the expert chefs create their meals right before their eyes in a test kitchen that would make Chris Kimball smile.
Using fresh seafood and the latest elements of the kitchen chemistry craze, Fuji blows up local dining in a city that is booming itself.
