Having formerly been the man behind the pans at such local legends as Legal Seafood, XV Beacon and the Lenox Hotel in Boston, and the Red Lion Inn in Cohasset, Robrt Fathman is now in charge of both the musically-minded French bistro and wine bar Les Zygomate and its new modern Italian sibling Bel Ari (which is run by the family behind Pastene, so it must be autentico!). From salad Nicoise to pasta primavera, Fathman has the skills and experience to make it work and to give you two great places to go during or after work (or just for fun).
Matt’s Meals: How did you get into cooking?
Robert Fathman: I needed a job when I was about 13 years old. Not many people hire kids that age, so I ended up washing dishes.
MM: Where was your first professional kitchen experience?
RF: Grammer’s Restaurant in Cincinnati. It is the second-oldest restaurant in town. Lots of wurst, braten and potato pancakes.
MM: What is your favorite dish to prepare?
RF: Ramen is a late night after-work favorite at my house. It is easy, quick and delish!
MM: What is the best part of your job?
RF: Making the customers happy with great food and watching/coaching the development of younger cooks.
MM: Who is your favorite chef in Boston?
RF: Daniel Bojorquez at La Brasas in Somerville is a kick-ass cook.
MM: What do you usually make for yourself at home?
RF: The above-mentioned Ramen, crepes and crock pot brisket. Throw a brisket, some coke, beef stock and Sirachi in a crock pot and let it go for eight hours or so. Add roasted carrots and spuds. It’s a super easy, super delish meal.
MM: If you could dine with any three people, who would they be?
RF: Jack Keourac, Sid Vicious (if he promised to behave) and George Carlin
