Matt records segments for Jordan Rich’s “Connoisseur’s Corner” which airs on WBZ (http://boston.cbslocal.com) weekdays at 11:55 AM.
The following is a “script” for one of Matt’s forthcoming segments:
Atlantic Fish Co.
New Englanders love fish. As the source of some of the world’s most popular seafood preparations (Chowdah, anyone?), we are the capital of cod, the seat of scrod and the home base of so many other finned favorites. It is no wonder, then, that we also offer some of the best fish restaurants in the world.
Among Boston’s phalanx of fishmongers is Atlantic Fish Co. on Boylston Street.
While many people know and love this locally-sourced business which has been working with the same family for four generations and is careful to harvest only from areas where the fish are relatively plentiful and always delicious, not as many may be aware that they recently brought in a new Executive Chef from Norway who brings all of that fish-loving nation’s pedigree and passion to Boston.
Chef Andreas Edlbauer learned to cook from his grandmother and has since served at such revered restaurants as Thomas Keller’s Per Se, Chris Flint’s 11 Madison Park and The James Beard House in New York City and at The Ritz Carlton hotels in Orlando and St. Louis. As he also worked for some time at the Living Room in Boston, he knows the area and its tastes quite well and is always eager to make each dish to the diner’s specifications…if not better!
So whether you are already a fan or are yet to discover Atlantic Fish, let Chef Edlbauer take you on a tasty tour of what makes our region and his native land famous.
