We have all heard a lot lately about the farm-to-table movement. I think I have recently found an example of farm to lunchbox. Nicole Ledoux grew up on an 88-acre farm and was always surrounded by fresh, delicious food. When it was discovered that her husband had severe food allergies, she took it upon herself to create delicious foods that fit his diet and they could enjoy together. The result is an expanding line of snack bars that are made in small batches with all natural, locally- (and carefully-) sourced ingredients that are free of all major allergens (such as nuts, soy, wheat, dairy, egg, and gluten). They are also packed with protein and minerals that come from such inventive ingredients as organic flax, pumpkin, and sunflower seeds, gluten-free oats, Cape Cod cranberries, VT maple syrup, and sea salt. While the company gets their ingredients from the farm, they hire from the inner city for their zero-waste Dorchester plant and maintain a fully-transparent supply chain that helps their farmers and their customers trust and enjoy both the product and the process.
It’s so basic, it’s trendy! And it’s delicious!
