Don’t “Welsh” on these great cakes

Having recently visited the United Kingdom after 20 years away, I was impressed by the vast improvements in their culinary culture. And while the legendary likes of Gordon Ramsay and Jamie Oliver are making waves on both sides of the pond, there were still many smaller chefs and food artisans who made an impression. One of these is Helen Coates, a Welshwoman who has taken her traditional tastes to the Colonies.

Copper Kettle Bakery in Westwood offers traditional Welsh cakes. For those who may not be familiar (though I recommend becoming so as soon as possible!), the Welsh cake is somewhere between a scone and a pancake. Coates’ family-inspired recipes include cakes that are filled with traditional fruits like cranberries and currants, as well as chocolate chips and pineapple. On her website (www.copperkettlebakery.com), Coates also offers Welsh cake mixes and her own traditional jams so fans can enjoy a proper Welsh tea or a satisfying snack.
