While I continue to buy pure Greek olive oil from places like Greek International Food Market in West Roxbury to avoid counterfeit oils from elsewhere, I have also been exploring other elements of the Hellenistic diet. One of my favorites has been Retsina – a Greek wine that is made with pine resin – both as a natural preservative and as what became a subtle aromatic flavor enhancer.
Of this varietal, one of my new faves is Tear of the Pine from Kechris Winery. In addition to its subtle sappiness (which in this case is a GOOD thing!) Tear of the Pine (which is aged in two separate barrels, giving it a unique flavor profile) offers subtle minerality and fruitiness and hints of vanilla and butter that blend together well with each other and with nearly any meal.
So as we all try to eat more like our ancient ancestors who conquered the world with strength and fortitude instead of guile and guilt, it is good to have something delicious and appropriately sappy to wash down our Mediterranean diet.
