The following is a “script” for one of Matt’s segments:

In my many years as a food reviewer, I have had to taste a lot of foods that are frankly missing things. And while some of those things may be good to miss- such as gluten, allergens, hormones, and the like, many of the foods that are missing these are also missing the most important thing- taste.

That is why I was so excited to meet Marion, MA mom-trepreneur Vanessa Everett, maker of Junebug Pancakes.

Though they are free of gluten, wheat, dairy, soy, corn, eggs, and yeast, Vanessa’s kid-sized pancakes are still nutritious. Among the simple ingredients are brown rice flour, coconut milk, ground flaxseed, and other naturally healthy things. They can also go from freezer to toaster or microwave, making for a great day starter or snack that many kids (and kids at heart) can make for themselves!

Junebug pancakes taste so good, my girls and I have been enjoying them on their own, or as a fun alternative to sandwich bread. No matter when we enjoy them, however, the key word is “enjoy”!
