As I am such a fan of Bixby and Co. chocolates and as I live in the town that at least shares their name, I wanted to take a moment to speak about Bixby’s famous Needhams.
Apparently, these chocolate-covered combinations of exotic coconut and domestic Maine potato were created in 1872 in a confectionary in Portland and became a huge hit across the state. While mashed potato in candy may not at first seem appetizing, these are not called Needhams for nothing, for once you take a bite you will realize you can’t be without ‘em either.
In their recently-released version, the team at Bixby & Co. have updated the process while maintaining that real Maine taste by making their Needhams all natural and non-GMO. They are also kosher and gluten-free, so almost anyone can enjoy them, even if you are not from Maine.
As they come in packs of two or four, Needhams are perfect for snacking or sharing and can always be around when you- need ’em.
